Do not be embarrassed, I only learned to bake sweet potatoes much later than I should. If I had known that they were not only more versatile but also tastier than their potato cousins, then I would have learned how to make them when I was in elementary school. It's ok. Ah well.

I've tried to make it up by baking sweet potatoes as much as possible. There are so many delicious dishes that pair well with sweet potatoes that it is easy to complete a meal.

You can also use baked sweet potatoes as the basis for a delicious lunch depending on what you choose to add. You can make your sweet potatoes as hearty or as light as you like.

Pre-heat the oven to 425degF. Poke holes in the sweet potatoes with a fork and then top each one with a butter cube.

Bake

Bake for 30 minutes, or until the inside is soft. Transfer the baked goods to a serving plate after removing them from the oven.

Cool

Let the sweet potatoes cool. Cut a small slice off the top.

Garnish

Top each potato with Greek yogurt, and garnish it with chopped chervil.

  • Try different toppings like tzatziki and feta. If you want a healthier alternative, opt for chickpeas and kale.
  • If you do not have Greek yogurt, you can use sourcream or mascarpone.
  • Why not bake a sweet potato and have it for breakfast? You can use leftover sweet potatoes from the night before as cereal. They are rich in fiber. Add crispy bacon, scrambled egg, shredded cheese and sourcream to the top.
